Fedhealth Dream Chasers dietician Andrea du Plessis shares these healthy breakfast recipes featuring oats.

 

Banana Pancakes filled with Berries

Serves 1 to 2

 

Pancakes

2 eggs

1 large ripe banana

2 tbsp finely ground almond meal (or any flour)

2 tbsp muesli

1 tsp baking powder

¼ tsp cinnamon

1 tsp vanilla

 

Filling

Fresh fruit like berries and banana slices

Vanilla custard

Lime zest, optional

Peanut sprinkle, optional

 

Place eggs, banana, flour, muesli, baking powder, cinnamon and vanilla in a blender and blend until smooth. Heat a non-stick pan – lightly spray with non-stick spray. Pour batter into hot, non-stick pan. Flip pancakes when they’ve puffed slightly, are bubbling, and set on the edges. Let pancakes cool (to the touch but still warm) on a plate, so they will fold without breaking and you can hold them to eat. Fill pancakes with fruit, top with whipped custard, lime zest and enjoy! You can also add a little sprinkling of peanuts.

 

 

Overnight Oats

 

Overnight Oats with Coconut Milk, Dates & Cinnamon

½ cup raw oats (or a raw, unbaked muesli)

½ cup unsweetened coconut milk

¼ cup diced dates

1/8 cup tsp cinnamon

 

Overnight Oats with Cocoa & Banana

½ cup raw oats (or a raw, unbaked muesli)

½ cup milk

½ cup diced banana

1 tsp skinny hot chocolate powder

 

Overnight Oats with Cranberries & Apple

½ cup raw oats (or a raw, unbaked muesli)

½ cup unsweetened coconut milk

½ grated apple rinsed with lemon juice

¼ cup dried cranberries

 

To prepare, mix all the ingredients into a glass jar, close the lid and refrigerate overnight. In the morning, stir it up and enjoy!
